Healthy Crunchy Caesar Salad Recipe

When we think of eating something  healthy, the first thing that comes to mind is fresh fruits and veggies. And today I have come up with a simple salad recipe – Caesar salad which is very healthy and tasty too! 

This salad is made up a bread croutons and lettuce with a super yummy dressing of mayo, lemon juice and spices. Bread croutons make the salad more crunchy and to maintain the same crunchiness mix the salad and immediately serve it. 
So lets get started..


For salad

  • 2 cups Lettuce
  • 1 cup bread croutons
  • Cheese optional

For Bread Croutons

Caesar salad

  • 1 tsp Olive oil
  • 2 bread slices cut in cubes
  • 1 tsp freshly crushed garlic

For Dressing

  • 1/2 cup Veg Mayo 
  • 2 tsp lemon juice
  • 2 tbsp freshly crushed Pepper 
  • 1 tsp freshly crushed garlic
  • 1/4 cup water
  • 1 tsp salt

Croutons Preparation

Cut the bread slices into cubes, you can take any bread of your choice, white or brown. 
Take a pan, keep it on low flame over stove, and add a tsp of Olive oil.
Now add bread cubes and toss them so that they get roasted.
Add freshly crushed garlic and toss the cubes again.
Roast them till they are nice and crunchy.
Take them out into a salad mixing bowl.

Salad Dressing

To make the salad dressing, take Veg Mayo, freshly crushed pepper and garlic into a bowl.
Add lemon juice and salt. Finally add water.
Mix the ingredients well till they form a smooth dressing. We are adding water here to make the dressing little thinner, as the mayo tends to be very thick and creamy and does not spread properly with the veggies. And our salad dressing is ready.

We already have croutons taken into salad mixing bowl.
We need to tear the lettuce leaves or chop them but not too small. And put them into the bowl.
Now its time for dressing the salad. Sk pour in our creamy mayo salad mixed with spices and garlic.
Give the salad a toss or mix them well with a spoon. And your crunchy, yummy delicious caesar salad is ready.
I have not added any cheese here, just to avoid few calories. But if you are a cheese lover, go for it. Grate some parmesan spinkle it over hot croutons in a pan and even in your salad. 

Few tips to make it more healthier 

  • Choose a low fat or zero fat mayo or mayo lite to avoid some fat and calories.
  • Instead of Mayo, you can take thick fresh yogurt to make salad dressing creamy yet healthy.
  • You can avoid olive oil while preparing croutons. All you need to do is dry roast the bread cubes without adding oil. It does not taste much different.
  • Avoid cheese, as yogurt will keep the taste high.
