I have divided the procedure into three main steps – first being, the making of palak puree, then comes the dough preparation and lastly rolling and frying parathas, to make the procedure simpler.

Step 1 – Making Spinach/Palak Puree

  • Heat the pan on medium flame, add few drops of oil, and put in fresh thoroughly washed Palak leaves which are roughly chopped.
  • Cover the pan for 2 mins, you will notice that the leaves are releasing water and are nicely cooked.
  • Put off the flame, and let the spinach cool down for a few minutes.
  • Once the spinach cools down, take it into the mixer jar and grind it into fine paste. And puree is ready.

Step 2 Kneading And Rolling Parathas

  • Take a large mixing bowl, add in all the ingredients wheat flour, gram flour, turmeric and chili powder, carom seeds, sesame seeds and salt.
  • Add a tsp of oil, spinach puree and little water and knead the dough. You can add a little more water if you feel so, and make the smooth dough. Let the dough sit for about 15 mins.
  • Now it’s time to roll the parathas. Make the balls from the dough and roll them.
  • Roll the ball, and drizzle some oil, now fold the paratha and roll it again. You can roll into triangular or square shapes to make them look little more interesting.

Roasting- Frying

  • Now place them over hot tawa and roast a little till you get golden brown spots and then flip it, fry it on both sides while spreading some ghee.
  • Your delicious Palak Parathas are ready, grab it on and have it with butter, yogurt, pickle or chutney.
